  • 4 medium bell peppers (any color)
  • 1 pound ground turkey (or beef/chicken)
  • 1 cup uncooked white rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick spray.
  2. Prepare bell peppers by cutting off tops and removing seeds.
  3. In a skillet over medium heat, cook ground meat with chopped onion and minced garlic until browned (about 5 minutes). Drain excess fat.
  4. Mix in cooked rice, drained diced tomatoes, spices, and half of the cheese; simmer for 5 minutes.
  5. Stuff each pepper with the filling and top with remaining cheese.
  6. Place stuffed peppers upright in the baking dish with half an inch of water at the bottom. Cover with foil and bake for 30 minutes; remove foil for the last 10 minutes.
