- 4 medium bell peppers (any color)
- 1 pound ground turkey (or beef/chicken)
- 1 cup uncooked white rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 2 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Spray a baking dish with nonstick spray.
- Prepare bell peppers by cutting off tops and removing seeds.
- In a skillet over medium heat, cook ground meat with chopped onion and minced garlic until browned (about 5 minutes). Drain excess fat.
- Mix in cooked rice, drained diced tomatoes, spices, and half of the cheese; simmer for 5 minutes.
- Stuff each pepper with the filling and top with remaining cheese.
- Place stuffed peppers upright in the baking dish with half an inch of water at the bottom. Cover with foil and bake for 30 minutes; remove foil for the last 10 minutes.
