Instructions

  1. Prepare your tools: Gather a large mixing bowl, saucepan, electric mixer, and an 8×8-inch greased baking dish.
  2. Bloom the gelatin: In a small bowl, combine 1/2 cup of water with gelatin and let it sit for 5 minutes.
  3. Heat sweetener: In the saucepan, mix remaining water with erythritol over medium heat until dissolved and gently boiling.
  4. Combine mixtures: Add bloomed gelatin to the syrup, stirring until smooth.
  5. Whip the mixture: Transfer to a mixing bowl and whip on high speed for 10-15 minutes until thick; add vanilla extract and salt halfway through.
  6. Set marshmallows: Pour whipped mixture into the greased baking dish and spread evenly. Let set at room temperature for at least four hours before cutting into squares.
