  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz Philadelphia cream cheese, softened
  • 1 cup sour cream
  • 2 ripe fresh peaches, thinly sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press firmly into the bottom of the prepared pan.
  3. Beat cream cheese in a separate bowl until smooth. Gradually mix in the remaining sugar and vanilla until blended.
  4. Gently fold in sour cream and eggs one at a time; avoid overmixing.
  5. Fold in sliced peaches and mixed berries into the filling mixture.
  6. Pour the filling over the crust and bake for 50-60 minutes until slightly jiggly in the center. Cool completely before refrigerating.
