- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup bell peppers, thinly sliced
- 1 cup carrots, julienned
- 1 cup cucumbers, thinly sliced
- ½ cup fresh cilantro, chopped
- ½ cup roasted peanuts
- 3 tbsp fish sauce
- 2 tbsp freshly squeezed lime juice
- 1 tbsp sugar (adjust to taste)
- 2 cloves garlic, minced
Instructions
- Cook the chicken by grilling or poaching until done (6-7 minutes per side). Let cool and slice into bite-sized pieces.
- While cooling, chop bell peppers, carrots, and cucumbers into thin strips.
- In a bowl, whisk together fish sauce, lime juice, sugar, and minced garlic until combined.
- In a large bowl, combine sliced chicken with prepared veggies and cilantro. Pour dressing over and toss gently.
- Before serving, sprinkle roasted peanuts on top for added crunch.
