Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup cucumbers, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup roasted peanuts
  • 3 tbsp fish sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp sugar (adjust to taste)
  • 2 cloves garlic, minced

Instructions

  1. Cook the chicken by grilling or poaching until done (6-7 minutes per side). Let cool and slice into bite-sized pieces.
  2. While cooling, chop bell peppers, carrots, and cucumbers into thin strips.
  3. In a bowl, whisk together fish sauce, lime juice, sugar, and minced garlic until combined.
  4. In a large bowl, combine sliced chicken with prepared veggies and cilantro. Pour dressing over and toss gently.
  5. Before serving, sprinkle roasted peanuts on top for added crunch.
