Instructions

  1. Pop the popcorn kernels using an air popper or stovetop method to yield about 12 cups of popped corn. Transfer to a large mixing bowl.
  2. In a medium saucepan, melt the unsalted butter over low heat, stirring until fully melted.
  3. Add brown sugar and corn syrup to the melted butter. Bring to a boil over medium heat while stirring continuously until it reaches a rolling boil.
  4. Remove from heat and stir in vanilla extract and baking soda (watch out for bubbling).
  5. Pour the hot caramel sauce over the popped corn and gently stir to coat each kernel.
  6. Preheat oven to 250°F (120°C). Spread the caramel-coated popcorn onto parchment-lined baking sheets and bake for one hour, stirring every 15 minutes.
