  • 3 lbs corned beef brisket
  • 1 medium head green cabbage (about 2 lbs), cut into wedges
  • 4 large carrots, chopped into large chunks
  • 4 medium Yukon Gold potatoes (about 1.5 lbs), quartered
  • 2 medium yellow onions, quartered
  • 1 tsp whole peppercorns
  • 1 tsp mustard seeds
  • 2 bay leaves
  • Water or broth (enough to cover ingredients)

Instructions

  1. Rinse the corned beef under cold water to remove excess brine. Cut the cabbage into wedges, chop the carrots and potatoes, and quarter the onions.
  2. In a large pot or Dutch oven, place the corned beef at the bottom. Layer the cabbage, carrots, potatoes, and onions around it.
  3. Add peppercorns, mustard seeds, bay leaves, and enough water or broth to cover everything by about an inch. Bring to a boil.
  4. Reduce heat to low and simmer gently for about 3 hours until the corned beef is fork-tender.
  5. Remove the corned beef from the pot and let it rest for ten minutes before slicing against the grain.
  6. Plate slices of corned beef alongside vegetables, drizzling with flavorful broth to serve.
