- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon red gel food coloring
- 1/2 teaspoon blue gel food coloring
- Salt and pepper to taste

Instructions
- Boil the eggs in a pot covered with water over medium heat for 12 minutes. Remove from heat and let sit covered.
- Prepare an ice bath while the eggs are cooking. Once cooled, peel eggs under running water.
- Slice each egg in half lengthwise and scoop out yolks into a bowl. Mix yolks with mayonnaise, mustard, salt, and pepper until smooth.
- Divide the egg whites into two bowls; tint one half with red food coloring and the other with blue.
- Spoon or pipe the yolk mixture into each colored egg white half. Garnish with chopped chives or parsley.
