  • 4 ears fresh corn, kernels removed (or 4 cups frozen corn)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium red bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and slice off the kernels. Dice the onion and red bell pepper; mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onion and red bell pepper for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Stir in corn kernels and vegetable broth; bring to a gentle simmer for about 10 minutes.
  4. Blend half of the chowder until creamy using an immersion blender or regular blender.
  5. Return blended chowder to pot, stir in coconut milk and thyme; heat through.
  6. Season with salt and pepper before serving.
