Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion until soft and translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in wild rice and toast for about 2 minutes.
  3. Pour in vegetable broth, bring to a boil, reduce heat to low, cover, and simmer for 45-50 minutes until tender.
  4. In the last 10 minutes, add cranberries to plump them up.
  5. Once cooked, fold in chopped pecans before serving.
