  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 6 cups lettuce mix (romaine and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or canned)
  • 1 small red onion, thinly sliced
  • 1 ripe avocado, diced
  • Juice of 2 limes
  • ¼ cup chopped cilantro (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with chili powder, cumin, salt, and pepper. Cook for 6-7 minutes per side until golden brown and cooked through. Let the chicken rest for 5 minutes before slicing.
  2. While the chicken rests, prepare your vegetables by chopping the lettuce mix, halving cherry tomatoes, dicing avocado, and slicing red onion.
  3. In a large bowl, combine all the chopped veggies and add the sliced chicken once cooled. Drizzle with lime juice.
  4. Toss with your favorite dressing and serve immediately, or chill for later.
