  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 medium zucchinis (spiralized)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tsp Italian seasoning

Instructions

  1. Prepare the ingredients by rinsing and spiralizing the zucchinis.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden brown (6-7 minutes per side). Remove from pan.
  3. Add minced garlic to the same skillet until fragrant (about 1 minute).
  4. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan until fully melted.
  5. Add zucchini noodles and cook briefly (2-3 minutes) until slightly tender.
  6. Slice cooked chicken and return it to the skillet, tossing everything together for another minute until well combined.
